Commencement Ceremony Dinner Menu

June 4, 1895

This is the menu for the dinner following the second commencement ceremony of the Utah Agricultural College. Included in the dinner event was a series of toasts that were proposed by the president of UAC, President J. H. Paul, and a number of professors and honored guests. Throughout the menu are numerous quotes that embody the participants’ feelings about the event.
